Hosta 'Beet Salad'
 

Bob Solberg of Green Hill Farm in North Carolina registered this cultivar in 2009. It is a hybrid of an H. clausa normalis seedling x (H. 'Ōgon Tsushima’ × H. yingeri F2 seedling). A small size plant, it grows to about 12 inches in height and 24 inches in width. Its foliage is narrowly ovate, slightly wavy and has smooth texture with thin substance. The key characteristics are the red petioles and flower scapes that bear rich purple flowers in July.
